carrotes râpées

I hadn’t previously thought about carrot salad as a classic French dish until my friend Sheela recently requested it as part of the menu for a dinner at my house by calling it, well, a classic French carrot salad. Carrots + Dijon + lemon juice and a sprinkle of herbs “for color” - voila!
